చాప్లీ అనే పేరు పాష్టో పదం చాప్రిఖ్/చాప్దిఖ్/చాప్లీట్ నుండి ఉద్భవించి ఉండవచ్చు, దీని అర్థం "చదునైనది"-కబాబ్ కాంతి, గుండ్రని, చదునైన ఆకృతిని సూచిస్తుంది.[9] ప్రత్యామ్నాయంగా, ఈ పేరు చెప్పులకు ఉర్దూ/హిందీ పదం అయిన చెప్పులు నుండి ఉద్భవించి ఉండవచ్చు-ఇది కబాబ్ సగటు ఆకారం, పరిమాణాన్ని చెప్పడానికి చెప్పవచ్చు.[1][10]

కర్రలపై వక్రీకరించిన కాల్చిన మాంసం తినే సంప్రదాయం కనీసం సింధు లోయ నాగరికత నుండి భారత ఉపఖండం ఉంది. 12వ శతాబ్దపు సంస్కృత గ్రంథం మనసోల్లస చాప్లీ కబాబ్ తయారీకి ఉపయోగించే వంటకాన్ని పోలి ఉంటుంది.[11]

చప్లీ కబాబ్‌ను పచ్చి, మెరినేడ్ ముక్కలతో తయారు చేస్తారు, మాంసం గొడ్డు మాంసం లేదా గొర్రె/మటన్ కావచ్చు. ప్రధాన పదార్ధాలలో గోధుమ పిండి, వివిధ మూలికలు, మిరపకాయ పొడి, కొత్తిమీర ఆకులు వంటి సుగంధ ద్రవ్యాలు, తరువాత చిన్న పరిమాణంలో ఉల్లిపాయలు, టమోటాలు, గుడ్లు, అల్లం, కొత్తిమీరు లేదా జీలకర్ర, ఆకుపచ్చ మిరపకాయలు, మొక్కజొన్న పిండి, ఉప్పు, మిరియాలు, బేకింగ్ పౌడర్, నిమ్మ లేదా నిమ్మ వంటి సిట్రిక్ రసం ఉంటాయి.[6][9]

కబాబ్లను కూరగాయల వంట నూనెలో లోతుగా లేదా లోతుగా మీడియం వేడి మీద వేయించవచ్చు. సాంప్రదాయ చప్లీ కబాబ్‌ను సేంద్రీయ రుచిని ఇవ్వడానికి కలపతో కాల్చిన పొయ్యి మీద గొర్రె కొవ్వు లేదా ఆవు కొవ్వులో కబాబ్లను వేయించడం ద్వారా తయారు చేస్తారు. ఆరోగ్య-చేతన కారణాలను పేర్కొంటూ కొంతమంది గ్యాస్ట్రోనమిస్టులు ఈ విధానాన్ని నివారిస్తారు.[12]
